2 c. vinegar
2 onions, sliced
6 bay leaves
6 whole cloves
2 tsp. salt
2 quarts of water
8 lbs. rump or bottom round roast
5 tbsp. shortening
4 tbsp. flour
4 gingersnaps
3 tsp. sugar
1/2 c. red wine

Directions:
Directions:
Combine vinegar, onion, bay leaves, cloves, salt and water. Marinate beef in mixture for 2-4 days, turning occasionally. Drain; reserving marinade. Brown meat in shortening, and remove meat from pan. Stir flour into pan and brown. Add marinade liquids, gingersnaps, and sugar. Bring to a boil and stir until thickened. Add meat, cover, and bake at 325º for 2 1/2 - 3 hours. Turn and baste frequently. Add wine 30 minutes before meat is done. Before serving, strain gravy and serve with meat and dumplings.
