Olive oil
1 onion diced
2 cloves garlic sliced (or minced)
Hot pepper flakes
Bacon diced
1 carrots diced fine
1 stalk celery diced fine
1/2 red bell pepper diced fine
5 or 6 crimini mushrooms (your choice)
1/2 cup white wine
1 28 oz. can of whole tomatoes (crush with hands)
1 jar purée tomatoes
1tbsp tomato paste
Salt
Pepper
Basil
Parsley
Oregano

500 ml 35% cream

1/4 cup parmigiano

Start cooking on med - high heat lower as you go along. Don't cook on high vegetables will burn.

Sauté olive oil , onions and garlic for approx 5 minutes - do not brown. Add bacon cook for 3 minutes. Add pepper flakes, carrots, celery and bell pepper cook for 5 minutes add wine stir until it evaporates.
Add tomatoes, tomato purée and tomato paste. Add salt pepper, basil, parsley and oregano. Cook for 20 minutes .
Once the sauce has cooked for 20 to 25 minutes add the 35% cream. Cook for 10 minutes

Stir in parmigiano .
