Fried Okra Recipe

Ingredients: 2 lbs. of fresh okra, sliced 1/2 inch thick 1 cup all-purpose flour 1/2 cup cornmeal 1/2 cup buttermilk 1 T. Season Salt Oil for frying Salt and pepper

Directions:Heat oil in a large pot or deep fryer to 350 degrees. (Do not fill the pot more than halfway up the sides with oil.)
In a bowl, mix together the flour and cornmeal and add some seasoning salt to flavor. Dip the okra into the buttermilk and then dredge the slices in the cornmeal-flour mixture and coat well. Carefully add the okra to the hot oil, in batches as needed, and cook until a golden brown. Remove from the oil and drain on paper towels. While okra is still hot, salt and pepper the slices. |

Notes: When I was growing up in Healdton, Oklahoma, my mother and daddy (Gladys and Ben Boyd) always had a large vegetable garden and in the summer there was always okra growing. I remember picking the okra in the warm sun with my mother. My daddy would come home everyday at noon for "dinner" and my mother would fry the okra for him. I was so proud that I had gotten to help. The okra was delicious. My mother was a wonderful cook." (Faye Boyd Horner)
Faye Boyd wed Doyce P. Horner on May 14, 1949. Doyce is the son of Elie Silman (E.S. "Dick") Horner. Elie Silman was the son of Robert Carson Horner.
