1/2 c water
1/4 t salt
1/3 c quick-cooking yellow grits, uncooked
1 12 oz can evaporated milk
1.5 c chopped cooked ham
1 c shredded sharp cheddar cheese
1 T chopped fresh parsley (1 T of dried)
1 t dry mustard
1-2 t hot sauce
3 large eggs, lightly beaten

Directions:
Directions:
Bring water and salt to a boil in a large saucepan, stir in grits. Removed from heat: cover and let stand 5 minutes (mixture will be thick). Stir in milk and remaining ingredients. Pour into a lightly greased 9.5 inch quiche dish or deep dish pie plate. Bake @ 350º for 30-35 minutes (mine usually takes 45 minutes). Let stand for 10 minutes before serving.
