4 c all purpose flour
1 c warm water
2 tbsp melted shortening
1 large egg
1/4 c sugar
1 tsp salt
Apple Filling:
1 stick butter melted
2 cans pie sliced apples (not pie filling) drain well, slice very thin
3 c sugar + 3 1/2 tsp cinnamon
1 box vanilla wafers, finely crushed

Mix all dough ingredients and work with hands until dough is smooth. Cover with plastic wrap, or place in Tupperware bowl with lid and let stand for 2 hours in a warm place. The dough will stretch better when warm. Divide dough in half. Leave half in the bowl covered and warm. Roll dough with a rolling pin on floured cloth to get started. Then start stretching the dough until it is paper thin. If the dough becomes difficult to stretch brush the edges with melted butter and continue to stretch. It should be as large a table is wide. Melt 1 stick of butter and spread over most of the stretched dough. Leave a little to brush on top after rolling. Spread apple slices over butter. Sprinkle cinnamon and sugar mixture, and the vanilla wafers over all. Roll jelly roll style, by lifting the cloth and rolling. Seal ends and place on a baking sheet with the seam side down. Brush top of rolls with butter and sprinkle with cinnamon and sugar. Bake at 350º on an insulated pan with parchment paper for 1 hour and 10 minutes.

When using fresh apples: peel and core, slice very thin. Cook in a small amount of water until tender. Drain well.
