Ingredients: 2 boxes vanilla ice cream sandwiches 1 large container whipped topping 1 16 oz jar hot fudge ice cream topping 1 pint ice cream of your choice, softened 1 cup chopped peanuts

Directions:Layer a 9x13 inch pan with foil. Make sure the foil lays over the sides of the pan. This will make it easier to remove the ice cream cake from the pan when frozen. Layer ice cream sandwiches on the bottom of the pan. You may have to divide some of the sandwiches to fit the bottom of pan. Spread a layer of hot fudge topping on top of the ice cream sandwiches. Then spread half of the cool whip on top of the fudge topping. Repeat the same process with the second layer ending with ice cream. Cover with plastic wrap and freeze for about one hour. Remove from freezer and remove the ice cream cake from the pan. Lift the cake peeling it off of the foil and place it onto a serving plate. Frost with additional cool whip. Drizzle on some chocolate syrup, if desired, and garnish with chopped peanuts. Place the ice cream cake back into the freezer and freeze for 2 hours. |

Notes: This is another dessert that I have made for a railroad cookout on a hot summer day. It didn't take long for it to disappear.
I have used chocolate, cookies and cream and vanilla ice cream for my layer of ice cream. All three have turned out very well. Your choice may be different but still wonderful. If you do not like peanuts or can not have them, you can use any type of sprinkles, candy toppings or chocolate chips for your garnish.
