6 boneless, skinless chicken breast halves
salt, pepper, garlic powder, curry powder
flour
1/2 c. butter
1/2 lb. fresh mushrooms, thickly sliced
1/4 c. Amaretto
grated rind and juice of 1 lemon
1 1/2 c. chicken broth
1 T. cornstarch
Patty shells or rice

Directions:
Directions:
Cut chicken into 1 inch strips. Sprinkle with spices. Roll in flour. Heat butter in large skillet and brown chicken strips. Add mushrooms, Amaretto, grated rind and juice of lemon. Simmer 5 minutes. Mix chicken broth and cornstarch. Stir into chicken in skillet and stir until bubbles form and sauce thickens. Season with more salt if needed. Spoon into patty shells or over rice. Garnish with parsley and diced tomatoes if desired.
