Oriental Chicken Pasta Salad Recipe

4 cups diced cooked chicken
1 lb. Penne pasta or bow tie pasta
1 t. crushed dry red pepper
¼ c. olive oil
6 T honey
5 T soy sauce
½ cup chopped cilantro or more
¾ c. peanuts
½ c. chopped green onions
2 T. sesame seeds or more

Directions:

Cook and cool pasta to al dente and drain well
In saucepan: stir red pepper and oils over medium heat for 2 minutes. Then add honey and soy sauce. Stir to combine and mix well with cooked chicken and pasta. Cover and refrigerate overnight.
When ready to serve, add chopped cilantro, peanuts and green onions to salad and toss. Sprinkle with sesame seeds and garnish with cilantro.
Makes 8-10 servings
Note: it can be made without chicken as well. I’ve added baby spinach to this salad as well and it’s great
