Brownie Baked Alaska Recipe

1 box brownie mix
1 container of vanilla ice cream
2 egg whites
1/4 cup sugar
1/8 tsp cream of tartar

Bake brownies according to box directions. Cool completely. Using a biscuit cutter or tumbler, cut circles of brownies about 3" in diameter and remove them from pan with a spatula.
Scoop 1/3 cup ice cream onto each brownie. Freeze until firm.

Preheat oven to 500º or broil.

With a mixer, beat egg whites on high, gradually adding sugar and cream of tartar. Beat until stiff peaks form. Make sure the sugar is dissolved.

Completely cover the icecream on each brownie, making sure the meringue seals to the edges of the brownie. Do this step quickly so the ice cream doesn't melt. Place brownies in a cake pan.

Bake 1 or 2 minutes on the top rack of the oven, 4 to 6 inches from the broiler. Serve immediately.

We put the cake pan in the freezer after they baked. When frozen, we put them in freezer bag or plastic container.

This is another recipe Reanne made at school, then came home and blessed me with the calories. They are really good! It's a great dessert you can take out of the freezer one at a time and eat. These are addictive too!
