1 1/2 tsp. ground cumin
1 tsp. dried oregano leaves
1 tsp. dried cilantro
1/4 tsp. dried red pepper flakes (opt.)
1 Tbsp. olive oil
1-2 cloves garlic, minced
2 lbs. boneless, skinless chicken breasts, cut into 1/2 inch cubes
1 small bunch of chopped green onion tops or chives
2 cans chicken broth
1 can (4.5ounces) chopped green chilies
2 cans (19 ounces) white kidney beans (cannelloni)

toppings:
2 cups shredded Monterey Jack cheese
1 small bunch sliced green onions
sour cream

Directions:

1. Combine cumin, oregano, cilantro and red pepper in a small dish and stir until well blended. Set aside. If desired, wrap in cheesecloth or place in a large tea ball or herb infuser. Reanne put the herbs in the soup at step 4, without cheesecloth or anything.

2. Heat oil in a large skillet over medium-high heat. Add chicken cubes, garlic, and onions. Cook 4-5 minutes, stirring.

3. Stir in chicken broth, chilies and herbs. Simmer over low heat 15 minutes.

4. Stir in beans and simmer, uncovered, 5 minutes. Top individual bowls of soup with cheese, sour cream, and chopped green onion tops or chives.
