1 small onion, chopped
1 1/2 c. fresh mushrooms
5 c. chicken broth
1 (6.2 oz) package fast-cooking long grain & wild rice mix
2 c. chopped cooked chicken
1 (8 oz.) cream cheese, cubed
1 can cream of chicken soup
1 jar pimientos

Directions:
Directions:
Saute onion & mushrooms in large pan. Add broth, seasoning from rice and chicken. Bring to boil, stir in rice, reduce heat and cook for 5 minutes. Add cream cheese, cream of chicken soup & pimientos. Cook & stir constantly for 5 minutes or until cream cheese melts. Serve immediately.
