2 pounds mussels
1 tblsp olive oil
1 shallot (chopped)
minced garlic or fresh
1/2 cup chicken broth
1/4 cup white wine
1/4 cup fresh lemon juice
1 green or red bell peppers (seeded and chopped)
1 tbsp butter
1/2 cup fresh parsley (chopped)
1 loaf of crusty bread

Directions:
Directions:
Usa a vegetable brush to scrub the mussels under running cold water. Discard any that are not tightly closed or that have broken shells
Heat oil in a large pot and add shallot and garlic cooking until softened
Add mussels, broth, wine, and lemon juice
Cover the pot and steam over medium heat until shells open
Add peppers, butter, and parsley
Cover and steam a few more minutes
