1 pkg lemon gelatin
1 cup boilling water
3 Tbsp. lemon juice
11 oz. cream cheese, softened
1 cup granulated sugar
1 tsp. vanilla extract
1 pt. Heavy whipping cream
Graham Cracker crumbs

Graham Cracker Crust ingredients:
1 1/4 cup Graham Cracker crumbs
1/3 cup butter or margarine
3 Tbsp. sugar

Directions:
Directions:
Make Graham Cracker Crust first so it can refrigerate overnight.

Place large bowl and the beater in the freezer.
Dissolve gelatin in boiling water; add lemon juice and cool.
Beat in small bowl the cream cheese and sugar together until smooth.
Add gelatin mixture to cream cheese mixture; mix well.
Whip chilled whipping cream until it stands in peaks (use large glass or metal bowl that has been in the freezer.)
Fold gelatin-cream cheese mixture and vanilla into whipped cream.
Pour into Graham Cracker Crust (recipe below)
Sprinkle with additional graham cracker crumbs.
Chill overnight.
Garnish if desired, with whipped cream, milk chocolate curls, fresh strawberries, or mint leaves.

Graham Cracker Crust:
Combine crumbs and sugar in medium-size bowl.
Stire in melted butter or margarine until thoroughly blended.
Pack mixture firmly into a 9X13 inch pan.
Need to refrigerate overnight.
