1 (3-lb) pork tenderloin
1/2 c. honey
1/2 c. soy sauce
2 T. brown sugar
1 tsp. ground ginger
2 cloves minced garlic
1 tsp. catsup
1/4 tsp. onion powder
1/2 tsp. ground red cayenne pepper
1/4 tsp. cinnamon
3-4 pieces apple wood soaked in water
Fresh parsley springs (opt.)

Place tenderloin in large plastic baggie. Combine honey, soy sauce, brown sugar, ginger, garlic, catsup, onion powder, red pepper and cinnamon, stirring well or shake in a bottle. Pour over tenderloin and seal baggie. turn several times to coat pork. Marinate in refrigerator 8 hours or overnight, turning occasionally. Remove tenderloin from marinade, reserving for basting. Add soaked apple wood to coals. Grill tenderloin directly over coals (around 300º) turning and basting with reserved marinade every 15 minutes. Grill until meat thermometer inserted into thickest portion registers145º. this usually takes about 45 minutes to 1 hour. Remove from grill and wrap in foil and let sit 20-30 minutes to let the juices settle; don't overcook or pork will become dry. To serve, slice tenderloin thinly and arrange on a serving platter. Garnish with parsley. Serve with barbecue sauce if desired.
