Three pound pork loin roast (I like one with a bone in).
2 jars Boars Head, Claussen or Silver Floss sauerkraut
Salt and pepper to taste

Directions:
Directions:
Lightly brown pork roast in Dutch oven. Season with salt and pepper. Cover with undrained sauerkraut and 1 cup water. Cover and bake at 350º for several hours until sauerkraut is soft and pork fully cooked. Add a little water if needed.

Serve with mashed potatoes.

Your mother asked me to send this recipe. It's my family's traditional New Year's Day meal; no one should have to eat Black Eyed peas! Auntie Ale called it the great white meal. I have since learned to expand on the theme by adding other white foods...potato and cheese pirogues are my favorite, but dumplings work too. Add some crusty bread and white wine and its perfect. .
