2 1/2 qt water
3 lb unpeeled large fresh shrimp
5 small red onions thinly sliced
8 bay leaves
1 (3 1/2 oz) bottle capers drained
1 cup olive oil
1/2 cup red wine vinegar
1/2 cup tarragon vinegar
1 T sugar
2 T fresh lemon juice
1 T Worcestershire sauce
1/2 tsp hot sauce
1/4 tsp salt

Directions:
Bring 2 1/2 qts water to boil, add shrimp cook 3-5 min. or until shrimp turn pink. Drain and rinse in cold water. Peel shrimp leaving tails intact and devein. Layer shrimp and next 3 ingredients in a large shallow bowl, stir olive oil and next 7 ingredients in a small bowl and pour over shrimp mixture. Cover and chill 8 hrs stirring occasionally. Drain before serving. Serves 6-8, prep time 45 minutes.
