"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Roast type meat
canning salt

Directions:
Directions:
Boil quart jars in canner for 30 min. & let cool. Cut meat into chunks & fill jars to top. (If you put the meat into the freezer for 20 minutes, it will cut easier). Add 1 tsp. salt. Put heated lids on and then the rims. Tighten & put jars in canner. Fill with water to cover jars. Put lid on & boil for 3 hours. Remove from canner, tighten lids again and let cool. Store in a cool dark place.
Note: Do not consume any canned foods in jars with a broken seal, cracks or bulging lid!

Personal Notes:
I remember making this with mom & dad. Mom would get a jar out, dump it in a pan & heat it. She boiled some potatoes & we put the meat & it's gravy over the potatoes. I made it for a couple years after Jim & I were married. I think we got the meat from Clifford Jr.
