2 Tbsp. oleo
1 c. diced celery
1 clove garlic, minced fine
2 medium onions, chopped
1 can tomato paste
1 green pepper, diced
1 tsp salt
½ lb. sharp cheese, grated
1 tsp vinegar
1 or 2 cans sliced mushrooms
1 (8 oz) pkg. noodles

1 ½ c. water
1 c. tomato juice
1 lb. ground beef, browned with ½ tsp salt

Melt oleo in large skillet. Add onions, celery, green pepper and garlic. Cover and cook slowly until soft. Stir frequently. Add ground beef to celery mixture. Stir in tomato paste, mushrooms that have been chopped, water, tomato juice, cheese, salt and pepper. Simmer about 15 min to make a rich sauce. Meanwhile cook noodles until just tender in boiling salted water (1 tsp salt to each quart of water), drain and mix noodles with sauce. Cover and cook slowly on low burner or better in 350º oven for 1 hour.
