1/4 cup red wine vinegar
2 tbsp. fresh lemon juice
2 tbsp. honey
1/2 cup olive oil
4 cups water
2 cups chicken broth
1 lb. orzo
1 lb. grape tomatoes, halved
7 oz. package of feta cheese, cut into 1/2" cubes
1 cup fresh Italian parsley, chopped
1 cup green onions, chopped
1/2 cup pine nuts, toasted in skillet

Directions:

1. Whisk vinegar, lemon juice and hone in small bowl. Gradually whisk in oil until it emulsifies. Season with salt and pepper, cover and chill.

2. Bring water and broth to a boil in large saucepan. Stir in orzo, reduce heat to medium, cover partially and boil until tender but firm to bite. Stirring occasionally. Drain and cool. I usually alternate bowls to cool it down. Needs to be pretty cool before putting in the salad.

3. Mix tomatoes, feta, parsley, green onions and orzo. Add vinegarette and toss to coat. Season with salt and pepper.

4. Add pine nuts before serving.
