This is for a 4 or 5 quart freezer.
5 pints half & half
May need to add some whole milk
6 eggs
2 tbsp. vanilla
2 1/2 c. sugar (start with 1 1/2 & add more as desired.
1 1/8 - 1 1/4 tsp. salt

Directions:
In your large mixer bowl put all the eggs, salt, sugar, and 2 pints of the half & half. Beat with mixer until mixed. Pour into a pan & cook on med. heat until right before it comes to a boil. Don't boil but it should be very hot. Be sure to keep scraping bottom of pan so it doesn't stick or burn. Remove from heat. Pour remaining half & half in mixer bowl. Slowly add hot mixture & then vanilla. Turn mixer on and mix again. Taste it. All of the flavors should taste fairly strong, the salt, sugar & vanilla. When it freezes it looses flavor. Add more sugar etc. as needed. Pour into freezer container & if it doesn't reach the fill line, add some whole milk. Stir it & taste again to see if it needs more of anything.

Put container in icecream freezer with crushed ice and rock salt, or icecream salt. Start electric freezer, keep adding ice and salt as it melts. Machine will stop when it's ready. Take the beater out of container & serve. Freeze remainder.
