1/2 to 1 head lettuce or garden lettuce
1/2 or less onion chopped
3 strips of bacon & 3 tbsp. of drippings
3 tbsp. brown vinegar
3 tbsp. sugar
1/2 tsp. salt

Clean & dry lettuce. Tear up into large bowl & let set for about 2 hrs. Lettuce should be room temp., not cold. If rushed for time, zap in microwave for 10 or 15 seconds. Mix 1/2 of the onions into lettuce.
Cut up bacon & fry until crisp. Remove to paper towel. Let drippings cool down a bit. Then add the rest of the onions, vinegar, sugar & salt. Heat & boil a few minutes until not so watery. It will get a little syrupy. Put crumbled bacon on lettuce & pour hot dressing on & mix. Serve immediately.

Mom didn't write down how to make wilted lettuce. I always had to guess because she would say a little of this and that! I was thrilled to get this recipe of Uncle Jerry's, & it is the best wilted lettuce recipe I have ever tasted!!
Our family loves this and I serve it with one of our favorite meals. Joyce's pork chops & rice! Yum!!
