1 Beef chuck roast. Chuck makes the best roast.
1 onion cut in half
Flour
Salt Maybe 1/4-1/2 tsp. per side. I don't measure either!
Pepper
Oil 1/4-1/2 c. should coat bottom of pan good, but you don't want it swimming either. You can always add more if needed.

Flour roast on both sides and put in roast pan with heated oil. Medium high heat is sometimes to hot, so play around with it between medium & med. high. If the pan starts getting to dry while browning add more oil. Salt & pepper each side. It will probably take at least 20 min. to brown on both sides. That's why you don't want the heat to hot. You want it to more slowly brown to get that carmalized brown. After it's really brown put the onions on it, cover and bake @ 350º for 2-3 hrs. depending on size of roast. It should be fork tender when done. Mom said never ever add water to the pan unless it looks like it may be starting to burn. Your drippings won't be as good for gravy if you add water. Prep. time 2- 3 1/2 hrs.

Just in the last 3 or 4 years have I figured out how to make roast like mom's. The right amount of oil, plenty of salt, and browning the right way are key. I'm a slow learner!
