2 cups of corn (drain canned corn, thaw frozen corn).
1/2 purple onion, diced
1 red bell pepper, diced
Two 15oz. cans black beans, rinsed and drained.
3 tsps chili powder, maybe a little cumin, too.
2 Tblsps of olive oil.
1/4 tsp garlic powder or use crushed garlic.
1/8 tsp salt.
2 Tblsps balsamic vinegar.
2 Tblsps lemon juice.
1/2 cup fresh minced cilantro.
black pepper to taste.

In a very large bowl, gently toss together corn, onion, red pepper, chili powder and cumin. Add beans and stir as gently as you can so as not to smush the beans. Sit at room temperature. Meanwhile whisk together olive oil, garlic, salt, balsamic vinegar and lemon juice. Pour this dressing over vegetables. Stir in cilantro and season with black pepper if desired. Chill for 2 hours before serving.

Another favorite Mexican dish that is very healthy, colorful and tasty. When I host BUNCO, I serve this dish, along with Kate's guacamole. The ladies love it.
