2 eggs beaten
2 cups sugar
3 cups flour
1 teaspoon soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon vanilla
1 cup oil
1 can crushed pineapple, drained
2 cups grated zucchini
½ cup raisins or nuts (optional)
½ cup sugar
1 tablespoon butter (melted)

Directions:

Sift flour, soda, salt, and baking powder. In a separate bowl beat eggs, 2 cups sugar, oil and vanilla. Mix in sifted ingredients. Fold in zucchini, pineapple and nuts. Pour into 2 loaf pans.

In a separate small bowl mix melted butter and ½ cup sugar. Sprinkle over the top of the batter.

Bake at 325 degrees for 1 hour.
