Crust:
1 ½ cup flour
2 tbsp sugar
½ tsp salt
½ cup oil
2 tbsp milk

Mix, then put in 9-inch pan and bake 20 minutes at 350 degrees F.

Filling:
1 cup sugar
1 cup water
3 ½ tbsp corn starch
2 tbsp white corn syrup
Fresh peaches
3 tbsp Peach Jell-O
1 tsp almond or vanilla extract

Directions:
Directions:
Combine first 4 ingredients. Cook over low heat until thick and clear. Remove from heat. Add Jell-O. Stir until dissolved and then add vanilla. When cool add to peach slices in pie crust. Put in refrigerator to cool. Serve with Cool Whip or whipped cream.

Slice 4-6 pieces.

Mom brought three pies when Don and I first moved to Clive, Iowa. Steve and Carla were here visiting. We added the whipped cream right before we were going to eat the peach pie. It was delicious!!!
