1 package shredded sharp cheddar or Mexican mix cheese
1 small jar diced pimentos
Mayo to taste (I use Hellman's Light)
Hot sauce to taste
Ground Pepper to taste...
that's it!

Combine all ingredients in a bowl, turn out into a shallow baking dish and cook at 300º or so before serving with tortilla chips or Triscuits or whatever suits you.

This is so easy it is almost as embarrassing as Andy's "Toast" recipe;) However, I always keep the cheese and pimentos handy so I have something to take for a last minute function. Who doesn't like hot cheesy goo?
