1 small onion, finely grated in blender or food processor
1/2 C. cider vinegar
1/2 C. sugar
1 t. dry mustard
1 t. salt
3/4 C. oil (olive oil separates so use vegetable oil)
1 T. poppyseed (can add more if desired)



Directions:
Directions:
Place all ingredients, EXCEPT OIL AND POPPY SEEDS, in a blender or food processor. Through the top of the blender, gradually pour in the oil, while running the blender on medium/high. Mixture will thicken as the oil is blended in. When thickened, add the poppy seeds and process just until mixed into the dressing.

This dressing will keep for a long time in the refrigerator, in a covered container. If you use a red onion, the dressing will be a beautiful shade of pink.
