Ingredients: 2 (1 lb.) whole flounders, cleaned, heads removed (do not filet) 3 heaping tbsp. white corn meal 3 heaping tbsp. all purpose Flour 1/2 cup Vegetable oil Garlic Salt and pepper to taste 1/2 bottle of apricot preserves 1 tbsp. ground mustard

Directions:Combine apricot preserves and mustard in small saucepan and heat on medium heat until hot.
In a large skillet, add 1/2 cup of vegetable oil and heat to 375º.
Score the flounder on top surface in large X's. Sprinkle with garlic salt and pepper. Mix corn meal and flour together on a platter. Dredge flounder in mixture on both sides. Place in skillet and cook for 3 - 4 minutes on one side, flip, then 3 - 4 minutes on the other side until done.
Brush the apricot sauce on top of the flounder, keeping the remainder as dipping sauce. |
