2 tbsp. soy sauce
6 (1" to 1 1/2" thick) slices beef tenderloin
2 tbsp. olive oil
1 (17 1/4 oz.) pkg. frozen Philo pastry sheets
1/4 cup plus 2 tbsp. fine, dry breadcrumbs
1 (5 oz) pkg. cracked pepper or herbed Boursin cheese
1/4 stick melted butter

Preheat oven to 400º.

Rub soy sauce on both sides of each filet. Heat oil over medium high heat in a heavy skillet, in batches and saute 2 minutes on each side. Remove from skillet and cool filets to room temperature.

Cut one pastry sheet into 4 (7 1/2") squares; cut remaining pastry sheet into five (7 1/2") squares. Roll individual squares into 6 (10") squares. Set aside remaining half of pastry sheet for other uses.

Sprinkle breadcrumbs in center of each pastry square, covering an area the size of a filet. Place filets on top of breadcrumbs; dot cheese evenly over filets. Gather pastry over filets in folds, moistening pastry with water and pinching just below the top edge to form a topknot. Place, topknot side up on a rack in a shallow baking pan. Baste with melted butter.

Bake at 400º to 25 minutes or until puffed and golden brown.
