2-1/2 c. cooked chicken finely chopped
1/4 c. minced chicken skins
1 c. fine bread crumbs
1/2 c. chopped celery
2 tbs chopped parsley
1/2 tsp. salt
1/8 tsp. sage
1/8 tsp. pepper
1/2 c. chicken stock
3 tbs. chicken fat or butter
2 eggs slightly beaten

Directions:
Directions:
Combine chicken skin, salt, sage, pepper, celery. Beat eggs and add stock. Combine chicken, eggs and stock to the mixture, mix gently and pour in oblong pan or a bread pan. Melt fat and pour over bread crumbs. Sprinkle with bread crumbs.

Bake 350º for 30 minutes.
