2 1/2 lbs. potatoes
1 c. reduced sodium chicken broth
2 T. lemon juice
2 T butter, melted
1 tsp. dried oregano
1/4 tsp. salt
1/8 tsp. pepper

Directions:
Directions:
Preheat oven to 375º. Peel and cut potatoes into wedges, place in shallow baking dish large enough to hold potatoes in single layer. Combine broth, lemon juice, salt, and pepper in a bowl. Pour over potatoes, stir to coat.
Cover baking dish with aluminum foil. Bake in preheated oven for 45 minutes, uncover, turn potatoes over and bake uncovered another 30 minutes or until tender. (from "Greek & Not-So-Greek Cookbook," St. Katherine Greek Orthodox Church, Chandler, AZ)
