4 Large Cucumbers
½ c. Water
4 c. Sugar
2 lemons (juiced)

Directions:
Directions:
Peel and dice cucumbers. Combine cucumber and water in heavy kettle. Add Sugar and lemon juice stirring until sugar is dissolved. Heat to boiling. Boil rapidly until jam test for set, about 25 minutes. Seal in hot sterilized glasses. Note: This jam is pale in color, so you may want to add a few drops of green food coloring. Sometime you can add a little powdered ginger ( ¼ to ½ tsp.)
