9-inch baked pie shell
1/4 c slightly beaten
2 all purpose flour
3/4 sugar
2 T cornstarch
1/4 tsp salt
3 c milk
3 Egg yokes, slightly beaten
2 T butter
2 tsp vanilla extract
1 c Coconut

Directions:
Directions:
Combine flour,sugar,cornstarch and salt.\Gradually add milk: blend well
Cook stirring constantly until thick,whisk
Blend about 1/2 c of hot mixture into egg yokes then add to the rest of the mixture
cook 1 min, stirring constantly
Blend in butter and vanilla extract
Cover and cool to lukewarm stirring occasionally
Pour into baked pie shell
Top with meringue
Bake 10 to 12 min.
