2 cups flour
1 tsp salt
1/4 cup shortening
1/2 cup of luke warm water (more if you feel it's too dry)

Mix flour, salt and shortening. Gradually add water and stir with a fork. Form into a ball and knead thoroughly until smooth and flecked with air bubbles on a lightly floured board. At this point you can grease the ball, cover tightly and refrigerate for as long as 24 hours. Let dough return to room temperature before rolling it out. Divide dough into 8 balls for large, thin tortillas or 11 balls for regular 7" tortillas. For large thin tortillas roll as thin as possible on a lightly floured board. (or stretch and pat with floured hands until thin). Tortillas shrink when cooked. Cook onto a very hot ungreased griddle. Bake until flecked on one side. (20 seconds).
