1 pork tenderloin
1 tsp red chili flakes
1 tsp freshly ground black pepper
2 TBSP chopped ginger
1 TBSP seeded mined Serrano chili
2 TBSP minced garlic
3 TBSP soy sauce
2 TBSP oyster sauce
1/2 tsp sesame oil
2 TBSP rice vinegar
1/4 c. olive oil
1 1/2 TBSP soy sauce
1/4 tsp. sesame oil
1 c. watermelon
1 c. seeded English cucumber
1 Hass avocado
1 romaine lettuce head

Cut pork into 1 inch thick slices. Place the pork in a resealable 1 gallon plastic bag with a well-combined mixture PORK marinade ingredients. Marinade for 30 minutes (I did overnight).

Whisk together all the vinaigrette ingredients in a bowl.

Cut avocado into 1/4 inch cubes. Cut English cucumber into 1/4 inch cubes. Cut Watermelon into 1/4 inch cubes. In a medium bowl, combine the salsa ingredients, then gently fold in the vinaigrette. Chill.

Trim off the soft green end of the romaine, cut off the rood end and separate the leaves to create 4 in long lettuce "shells". Rinse, dry and chill the leaves.

Preheat grill to medium. Discard the marinade. Grill the pork 3 minutes on each side. Remove the heat, let rest 3 minutes and roughly chop into 1/2 inch pieces. Fill the lettuce shells with pork, top with Salsa and devour.

Oh my goodness, my family went nuts over this. Definitely a keeper. Next time I'm going to try with chicken.
