3 c. cooked white rice
1 c. sour cream
2 T. chopped fresh cilantro
1/3 c. chopped green onions
2 roasted peppers, diced
diced jalapeños, if desired
1 c. cooked corn
1 c. shredded Monterey Jack cheese
2 T. chopped fresh parsley

Directions:
Directions:
Mix all ingredients except 1/4 c. cheese. Bake uncovered for 30 minutes at 350º. Remove from oven and sprinkle reserved cheese on top. Let stand until melted. Garnish with sour cream and cilantro if desired.
