1/2 cup mayonnaise
1 tablespoon Dijon mustard
2 teaspoons prepared horseradish
8 slices sourdough bread
2 cups arugula
8 slices Braised Beef Brisket (see Recipe)
8 slices fontina cheese
1/4 cup butter, softened

Directions:
Directions:
Preheat a griddle or nonstick skillet to medium low heat.

In a small bowl, combine mayonnaise, mustard, and horseradish. Spread mixture evenly over 1 side of each slice of bread. Top half of prepared bread slices evenly with arugula, beef, and cheese. Top with remaining slice of bread.

Melt butter in skillet, and place in skillet. Cook sandwiches 4 to 5 minutes per side, or until golden brown. Serve.

The Fontina cheese makes this sandwich. Great served with Sweet Potato or Butternut Squash Fries.
