8 oz. package manicotti
1 lb. sausage
1/2 chopped onion
2 cloves garlic, chopped
28 oz. can diced tomatoes
6 oz. can tomato paste
1 tsp. dried basil leaves
1 tsp. sugar
1/2 tsp. salt
1/4 tsp. pepper
15 oz. container Ricotta cheese
8 oz. shredded Mozzarella cheese
4 oz. shredded Provolone cheese
1/3 cup grated Parmesan cheese
1 egg

Directions:
Cook manicotti according to package directions. Drain.
Preheat oven to 350º.
In large skillet, over medium heat, brown sausage. Pour off fat.
Add onion and garlic and cook until onion is tender.
Stir in tomatoes, tomato paste, basil, sugar, salt and pepper. Bring to a boil. Reduce heat and simmer uncovered.
In a medium bowl, combine Ricotta cheese, 1 cup Mozzarella cheese, Provolone cheese, Parmesan cheese, and egg. Mix well. Stuff manicotti with cheese mixture.
Spread half the tomato sauce on the bottom of a greased 13x9 baking dish. Arrange stuffed manicotti over sauce. Spoon remaining sauce over manicotti. Cover.
Bake 35 minutes or until hot and bubbly. Uncover. Top with remaining 1 cup Mozzarella cheese. Bake 5 minutes longer.

I got this great recipe off a box of manicotti noodles and it has been a "company dish" ever since! I like to use the Jimmy Dean HOT sausage.
