3 cups peeled and chopped tomatoes
2 tsp finely minced garlic
juice from 1 lemon.
salt and pepper to taste
3 tbsp white wine vinegar
1/2 cup olive oil
3 tbsp minced basil
1 tbsp minced parsley
1 lb pasta

Directions:
Directions:
Mix tomatoes, garlic, lemon, lemon zest, salt, and pepper together and set aside. (let marinate for 45 minutes)

Add vinegar, oil, basil, and parley to the tomatoes. Mix gently and taste for seasoning.

Bring 4 qts water to boil, add pasta. Cook about 8 minutes, drain, and rinse in cool water.

Mix all.
