1/2 lb ground beef or pork
1 bag coleslaw mix (grated cabbage and carrots)
1 cup chopped fresh mushrooms
1/2 tsp black pepper
1 tsp chopped garlic
1/2 tsp ground ginger
3 Tbsp soy sauce
2 tsp peanut butter
1 pkg egg roll wrappers
1 egg beaten

Directions:
Directions:
Brown meat in skillet; drain off fat. Add coleslaw mix, mushrooms, pepper, and garlic to skillet and stir to combine. Whisk together soy sauce, ginger, and peanut butter in a small bowl or measuring cup. Pour over meat mixture. Spoon 2-3 tablespoons of mixture onto each wrapper. Roll up as you would a burrito. Brush egg on edge of wrapper to seal it. Fry egg rolls in oil until brown. Drain on paper towels. Serve with sweet and sour sauce. If you roll them tight, and then cut them in half to serve, they make great appetizers. Use more filling to make a bigger egg roll for more of a meal or side dish.
