1 tsp. dry yeast, 1 T. warm water, 3 cups self rising flour, 3/4 cup sugar, 1 1/2 T. baking powder, 3/4 tsp. salt, 1 1/4 cups milk (or vanilla soy milk), 6 T. margarine or butter, 2 tsp. vanilla, 8 plums quartered, 1 tsp. cinnamon, 1 tsp. ground cardamom.

Dissolve yeast in warm water. Set aside. Combine flour, 1/2 cup sugar, baking powder and salt. Stir in milk, 5 T. melted margarine, vanilla and yeast. The batter should be somewhere between a stiff liquid and a dough that can be rolled with a rolling pin. Pour dough into a rectangle about 1/2 inch thick on an oiled cookie sheet. Cover dough with the plum wedges. Set them slightly "standing up". Brush plums with remaining T. of melted margarine. Combine 1/4 cup sugar and cardamom. Sprinkle over the top of the cake. Bake at 375º for 30-40 minutes or until center tests done.
