1 medium onion
1/2 c. sliced fresh mushrooms
2 T. butter
2 T. flour
2 c. beef broth
2/3 c. cubed cooked lean roast beef
1/2 tsp. garlic powder
1/4 tsp. paprika
1/8 tsp. salt
1/4 tsp. pepper
1/4 c. shredded motzorella cheese

In a large saucepan, saute the onion and mushroom in butter until onion is tender, remove with a slotted spoon and set aside. In a bowl, whisk the flour and broth until smooth; add to the pan. Bring to a boil, cook and stir for 2 minutes or until thickened.

Add the roast beef, garlic powder, paprika, salt and pepper and onion mixture; cook and stir until heated through. Garnish with cheese if desired.

Got snowed in for two days at Karen Reilly's in Urbandale with Karen and Pat Simon. Karen was busy going to classes at Drake, so I cooked this soup for us one evening. Hwy 44 was closed due to snow and wind. Larry was cooped up in the house at the Lake with no vehicle to drive. This was the winter of 2009.
