2 cups sugar
3/4 cup light white syrup
1/2 cup water
2 tablespoons butter
1 teaspoon salt
1 teaspoon soda
red skinned Spanish peanuts

Directions:
Directions:
Put sugar, syrup and water in heavy skillet. Cook to 250º. Add butter, cook until light brown, stirring frequently. Remove from heat. Mix salt and soda and stir in skillet mixture.
Grease shallow bread pan and cover bottom with peanuts. Pour mixture quickly in pan. When cool break into pieces.

Ensure you cook to light brown. If using salted peanuts, dampen fingers to remove some of the salt.
