8 ears fresh corn
1/3 medium-small red onion, diced fine
1/3 medium-size red bell pepper and 1/3 medium-size green bell pepper, diced.
Dried cilantro to taste (works better than fresh in this recipe)
1/4 c. olive oil (regular as opposed to extra virgin)
Juice of 1/2 lime - approx. 1 Tbsp.
1 tsp. rice vinegar
1 to 1 1/2 tsp. sugar
Salt and freshly-ground black pepper

Boil ears of corn for exactly 10 minutes. Do not overcook. Plunge cooked ears into a large pan of cold water. When cooled, cut corn off of cobs. Separate the kernels with your fingers. Combine all ingredients in a large serving bowl. Cover and chill thoroughly.
