Directions:Drizzle some oil in a large pot of boiling salted water, add 1 Tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package. Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! Add the shrimp, 1 1/2 teaspoons of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine. When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve. |

Notes: Karen Sue says: "I found this recipe in one of Barefoot Contessa's cookbooks. I have several of her cookbooks and enjoy making her recipes. They are not complicated, and they're always a hit." Editor says: "Sue's meals are delicious now, and she is a great cook! But, I remember the younger Sue who burned a bag of potato chips in our oven. She was pre-heating the oven, and didn't check to see if we had stored anything inside. I haven't seen her burn anything since, and she has turned into quite the amazing chef." (Aren't you glad I am the editor Sue, and I can remind our family about these past events?) HA Did you know? Jack Kessick started his own business 17 years ago. The one and only employee he had at the time, received the honor of being Employee of the Month for 6 months! Now, 17 years later, there are 140 employees. Guess there is competition for that honor now!
