1 lb. lg peeled and deveined fresh shrimp
1/4 c. olive oil
1 lg onion, julienne
1 each red and green pepper, julienne
2 jalapeno peppers, deseeded and diced
1 tbsp chopped garlic
2 tbsp chopped fresh cilantro
2 limes
1 c. white wine
2 c. chopped fresh tomato
1/4 c. butter
salt, pepper, and cumin to taste
Favorite hot sauce to taste

Heat oil at moderate temp, add shrimp and garlic - saute till garlic is slightly browned - add peppers, onion and jalapeno and "sweat" vegetables - add wine and reduce by half - add fresh tomato, cilantro and squeeze of line - season with salt, pepper, cumin, and hot sauce - finish just before serving by swirling in cold butter pieces - serve with rice or pasta.
