2 tbsp. veg. oil
2 tbsp. grainy mustard
2 tbsp. liquid honey
2 tsp. curry powder
1 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. ground black pepper
1/2 tsp. cinnamon or Allspice (Cinnamon is better)
4 boneless skinless chicken breasts
1/4 c. chopped fresh coriander (optional)

Fire up the BBQ to medium heat. In a large bowl, stir oil with mustard, honey, curry, salt, garlic powder, pepper and cinnamon. Baste the chicken with a basting brush or add chicken turning evenly to coat. (If you have time, marinade the chicken for a while. If not, it works fine without.)

Place chicken on the grill. BBQ turning and brushing often with remaining marinade. Baste only for the first 5 minutes, allowing all baste to cook. Remember, the marinade has been in contact with raw chicken, so it must be fully cooked. Grill 5 more minutes to ensure chicken is done. Sprinkle with coriander. I serve mine over white rice.

I usually double the sauce/marinade. I use half the marinade and baste and the other half to pour over the finished chicken and rice.
