1 t. canola oil
2 large eggs
3/4 c. minced onion
1 c. chopped chicken or pork
4 c. cooked rice, chilled (I use 2 c. white and 2 c. brown)
3 T. soy sauce
2 c. shredded iceberg lettuce (sounds weird, but delicious!!)
1/2 c. frozen peas
salt / pepper
1/2 green onions
1 t. sesame oil

Directions:
Directions:
Heat canola oil and scramble eggs. Remove from pan.

Add onion to pan and saute 2 minutes. Stir in chicken or pork and cook 2 minutes.
Add rice, soy sauce and stir fry 2 more minutes
Return eggs to pan. Stir in lettuce, peas, salt and pepper.
Sprinkle with green onions and drizzle with sesame oil.
