1 20-oz. can pineapple, reserving juice
1 Tbsp. lemon juice
3/4 c. sugar
2 eggs, beaten
2 Tbsp. flour
2 Tbsp. butter
2 c. rice, cooked
1 c. whipped cream

Directions:
Directions:
Drain pineapple and bring juice to a boil. Add lemon juice, sugar, eggs, flour and butter. Cook over low heat until thick. Chill until very cool. Add pineapple, cooked rice and whipped cream.
