1 cup finely chopped peeled tomato
1/2 cup each finely chopped green pepper, celery, and cucumber
1/4 cup finely chopped onion
2 teaspoons snipped parsley
1 tsp. snipped chives
1 large clove garlic, minced (I use 2)
2-3 tbsp. tarragon wine vinegar
2 tbsp. olive oil
1 tsp. salt
1/4 tsp. black pepper
1/2 tsp. Worcestershire sauce
2 cups tomato juice

Combine ingredients in stainless steel or glass bowl. Cover; chill at least 4 hours. Serve in chilled cups. Serve with croutons or crusty bread.

I use a glass bowl. Fresh tomato juice is great! You can do this in a food processor--it's lots faster, but it won't be crunchy. This is a great starter for paella! I usually double this recipe.
